Vegetarian Mexican Sweet Chili
Makes about 7 servings.
Ingredients
- 1/4 cup Lava Bee Honey
- 1 16 oz. can vegetable broth
- 1 sweet onion, chopped
- 4 Tbsp. paprika
- 2 cloves garlic, minced
- 1/3 cup brown sugar
- 5 Tbsp. chili powder
- 4 jalapenos
- 1 Tbsp. cumin
- 1 16 oz. can pinto beans
- 2 tomatoes
- 1 16 oz. can black beans
- 2 16 oz. cans of red kidney beans
Directions
- In a heavy pot over medium heat; cook onion, garlic, jalapenos, spices and tomatoes for 10 minutes, stirring constantly.
- Stir in beans, vegetable broth and lava bee honey and mix well.
- Bring to a boil then reduce heat and simmer for 30 minutes. At this point you can add garnish.
Note: To make it thicker and with more developed flavors, place in the refrigerator overnight.
