The University in partnership with Hawaiʻi Community College has developed a program to showcase the high-quality and variety of local products available on the island of Hawaiʻi, called Local First. Each month during the academic year UH Hilo on the first Wednesday and Hawaiʻi Community College on the third Wednesday offer lunch specials made 100% from local products.
The goals of UH-Hilo's Local First program are to support the development of the island’s farms and agricultural industry and to reduce the school's carbon footprint by lowering demand for imported goods. Currently 50-60 % of the products used in the food served at the University each day is locally produced, including island-grown, grass-fed beef, Waimea green leaf lettuce, and Kunia tomatoes which are used in its hamburgers.
